The Surprise Lighthouse Pumpkin Cake

While attending the Zeeland Pumpkin Fest in Zeeland, Michigan, our editor’s mother, Dorothy Harrison, discovered this pumpkin cake shaped to resemble the Holland Harbor Lighthouse, which is more commonly known as BIG RED.

When Dorothy saw the cake, the lady who made it, Margaret Burnett, exclaimed that she was elated that Dorothy showed up at the festival to see the cake.

Margaret said she was worried that Dorothy might have been out of town and missed the cake, which she made in honor of Dorothy, because her son was “into lighthouses.”

Well, our editor sends out his “thank you” to Margaret Burnett for making this wonderful lighthouse cake in honor of his mother. After all, he grew up a short distance form the famous lighthouse, plus he thinks his mother is a pretty neat lady. His only complaint was that nobody sent him a slice. He said, “I’ll bet it would have tasted mighty good!”
