Sunday Family Supper at Biloxi Lighthouse

Mississippi’s Biloxi Lighthouse, located in the middle of Highway 90, doesn’t seem like the place for a nice quiet Sunday supper. But then if you have a big family, Sunday supper was probably not very quiet anyway.

The lighthouse has withstood the winds and rain of many hurricanes and still stands strong, like the American Family.

Sweet Potato Pie

Makes 6 servings

2 cups mashed cooked sweet potatoes (about 1 pound)

2 eggs beaten

½ tsp nutmeg

4 T butter, melted

¼ cup raisins

¼ tsp salt

1 cup sour cream

½ cup brown sugar

1 tsp cinnamon

1 9-inch pie crust, unbaked (recipe follows)

Blend all ingredients, except the crust, in a bowl until smooth.

Pour into the unbaked pie crust and bake for 10 minutes at 450oF Reduce the temperature to 350oF, cover with foil and continued baking for 45 additional minutes. The pie is done when a cake tester comes out clean.

Remove from oven and let cook on a rack, but hide from your family until ready to serve!

Pie Crust

1 ½ cups all-purpose flour

1/8 tsp salt

¾ cup vegetable shortening, cold

3 T cold water

2 egg yolks, beaten

Mix the flour and salt in bowl and cut the shortening into the flour with 2 knives or pastry blender, until the mixture is in clumps the size of peas. Gradually add the water and egg yolks, and blend together.

Form the pie dough into a ball, cover with plastic wrap and refrigerate for 30 minutes.

Lightly flour work surface. Roll out the pie dough to be one inch larger than the pie plate and place in pie plate. Fold the extra dough under and crimp edges.
